Crispy Grilled Duck

Ingredients

  • 1 Whole Duck, defrosted

  • 2-3 Tbsp. Kosher Salt

  • Fresh Cracked Pepper

  • 2 Tbsp. Poultry Seasoning Blend

    Bring a large pot of water to a boil on the stove. Set up the grill for indirect grilling. Preheat the grill to medium-low.

    Remove defrosted duck from bag. Remove giblets and neck from cavity. Pat duck dry.

    Sprinkle the duck inside and outside generously with the salt, poultry seasoning, and fresh cracked pepper.

    Place the duck breast side up on the grill. Cover the grill and cook the duck for approximately 1 hour.

    Flip duck and cook for an additional 20-30 minutes or until internal temperature reaches 180 degrees F, measured at the thigh joint. Watch for flare ups.

    Transfer duck to a cutting board and let stand for 15 minutes.
