Tucker’s Deep Fried Duck

Scotts Deep Fried Duck

The Tucker take on a delicious way to prepare a Whole Duck! With a delicious Cajun rub on the outside, and the crispy skin thanks to the deep fryer, this is perfect for your next holiday gathering!

Ingredients

  • 1 Whole Duck, Defrosted

  • Peanut Oil as needed for fryer

  • Turkey Fryer

  • Meat Thermometer

  • Paper Towels

Cajun Seasoning

  • *adapted from 'Deep Fried Turkey Rub'*

  • 25 large bay leaves, crushed

  • 3 tablespoons Creole seasoning

  • 3 ½ teaspoons dried thyme

  • 3 ½ teaspoons dried oregano

  • 2 teaspoons garlic powder

  • 1 ½ teaspoons freshly ground black pepper

    Prepare the deep fryer. Add oil to full line on the deep fryer. (Peanut oil is preferred.)

    Turn on gas and allow oil to heat to 350 degrees F.

    Remove duck from its packaging. Remove the neck, giblets, and orange sauce packet (if included) from inside. Pat dry. Remove any excess fat. Optional: Inject your marinade of choice.

    Mix Cajun spices together.

    Rub the duck inside and out with the seasoning mixture.

    Load the duck into the fryer basket. Slowly lower the duck into the hot oil and cover.

    Fry for 3 minutes per pound plus 5 minutes, until internal temperature at the leg joint reaches 180 degrees F. (Place the tip of the thermometer into the leg joint where the thigh connects to the backbone.) Keep oil at a constant 350 degrees F while frying.

    Remove duck from the fryer very carefully and rest for 5-10 minutes.

    Carve the duck and serve.
