Duck Potato Bombs

Ingredients

  • 1 Roast Half Duck, Defrosted or 1.5 Cups of leftover Duck meat

  • 2 Cups Mashed Potatoes

  • 1 Bunch Green Onions, Thinly Sliced

  • 4 Slices of Cooked Bacon, Diced

  • 4 Cloves Garlic, Minced

  • 1 Block Cheddar Cheese

  • 2 Eggs

  • 3/4 Cup Flour

  • 1.5 Cup Panko

  • Oil for Frying

  • Salt to Taste

    Preheat oven to 375 degrees and bake Roast Half Duck for 15-20 minutes or according to packaging instructions.

    Shred Roast Half Duck once cool and dice into bite size pieces.

    Combine mashed potatoes, green onion, bacon, garlic, and duck in a large bowl.

    Cut cheddar block into cubes. Form a ball of the mashed potato mix and press a cheddar cheese cube into the middle and form ball. Repeat for remaining potato mix. Let rest for at least 10 minutes in the fridge.

    In three separate bowls, add eggs whisked, flour, and panko breadcrumbs.

    Coat each potato ball in flour, egg, then panko.

    In a large saucepan, add oil and deep fry potatoes at 375 degrees F until crispy brown for about 2-4 minutes.

    Transfer potatoes to a plate to allow to drain and dust lightly with salt.
