Deep Dish Pizza

Ingredients

Duck Sausage

  • 12 oz. Ground Duck

  • ½ tsp. Ground Sage

  • ½ tsp. Oregano

  • ½ tsp. Rosemary

  • ¼ tsp. Chili Powder

  • ¼ tsp. Thyme

  • ¼ tsp Chili Flakes

  • ½ tsp. Salt

  • ¼ tsp. Pepper

Pizza Crust

  • 4 Cup All Purpose Flour

  • ¼ Cup Cornmeal

  • 1 tsp. Salt

  • 3 tsp. Sugar

  • 1/2 tsp. Rapid Rise Yeast

  • 1 ½ Cup Warm Water

  • 1 Tbsp. Butter

  • ½ Tbsp Olive Oil

  • 4 Tbsp. Vegetable Oil

Sauce & Cheese

  • 10 Slices Mozzarella

  • ¼ Cup Grated Parmesan

  • 2 Tbsp. Olive Oil

  • 1 Sweet Onion, Diced

  • Red Pepper Flakes to Taste

  • 24 oz. San Marzano Tomatoes

  • 3 Garlic Cloves, Minced

  • 1 tsp. Salt

  • ¼ Cup Sugar

  • 3 Tbsp. Red Wine Vinegar

    Whisk yeast, sugar, and warm water together. Let bloom until slightly risen (about 5-10 minutes).

    Combine remaining dough ingredients in a mixer. Knead a few times by hand to form into a ball. Press into cake pan and let rest while you make the sauce and duck sausage.

    Combine duck sausage ingredients. Bring a sauté pan to medium heat. Let duck sausage brown until crispy for about 10-15 minutes.

    Start tomato sauce by sauteing onions and garlic in 2 Tbsp. olive oil on a large sauce pan on medium heat for about 5 minutes. Add tomatoes and mash them with a potato masher until smooth.

    Add in red pepper flakes, salt, sugar, and red wine vinegar then let simmer for 10 minutes.

    Assemble Pizzas: In a cake pan brushed with olive oil press dough in and form to pan pushing crust all the way up the sides. First layer on mozzarella slices, then duck sausage crumbles, sauce, and then sprinkle grated parmesan across the top.

    Bake at 475 for 20 minutes. Let cool for 10 minutes, then slice and serve.
