Peking vs. Pekin Duck: What is the Difference?

Serving Peking Duck is a longstanding tradition during Lunar New Year. Dating as far back as 400 AD, it is one of the most symbolic Chinese dishes, representing loyalty and good fortune for those feasting together to celebrate the coming year.

Traditional Peking Duck is served with several elements including sliced pieces of crispy roast duck placed on Chinese pancakes and topped with savory hoisin sauce and julienned cucumbers and scallions. The rich flavor of the tender duck meat and crispy duck skin pairs well with the salty, seasoned notes of the hoisin sauce.

Peking Duck should not be confused with Pekin ducks. Recipes for Peking Duck—note the “g” on the end of the name—call for cooks to utilize a Pekin duck—notice the absence of a “g” at the end of the name. Pekin duck is the world’s most popular breed of meat duck. Noted for their white feathers and yellowish bills, this breed of ducks originated in China and is preferred in much of the world because of its mild flavor and tender texture. American consumers prefer Pekin duck because it is not gamey like other duck breeds such as Muscovy, Moulard or Mallard.
