Easter Themed Duck Charcuterie

Still trying to figure out an Easter menu that everyone will enjoy? Trying to entertain a crowd of adults, toddlers and everyone in between is a big task to take on. While the kids decorate the eggs and search for candy hidden around the yard, embrace the fun of cooking and create an Easter themed charcuterie board!

First make sure you have your Duck Bacon and Duck Breast thawed and ready to cook. You can then start by preheating a skillet over medium-high heat. Place a single layer of duck bacon in the skillet ensuring that the bacon will be able to cook evenly. Cook both sides for 4 minutes. Grab a plate/pan and place a couple layers of paper towel down. Once it is done, remove the bacon from the pan and place onto the paper towel. Set that off to the side for now.

Next you will want to score the duck breast skin in ¼" intervals. When doing this, be careful not to cut into the meat. Rotate the duck breast and score again in the same ¼" intervals. This should make a crisscross pattern in the skin. Sprinkle it with salt and pepper, to taste.

Once the skin has been scored and it has been seasoned, place the duck breast skin side down in a sauté pan. Turn it onto medium-low heat. Place the lid on the pan and make sure the duck breast is covered. Once it is covered, cook it for 8-10 minutes to render the fat. After those 8-10 minutes, flip the duck breast and cook for another 5-7 minutes or until the internal temperature reaches 165 degrees.

Grab the duck bacon you had set aside. Chop the duck bacon into thin crumbles. Then cut the duck breast into thin slices. Cut some orange sweet peppers in half. Remove the seeds to make room for the cheese. Stuff each pepper halfway with Boursin cheese. Top it off with duck bacon crumbles. Place a sprig of dill at the top of the peppers to give it the appearance of a carrot.

Take the entire wheel of brie and place it at the center of a large charcuterie board. Place the candy eyes on the brie to give the bunny eyes. Add several dill sprigs to the brie wheel to give it whiskers. Last, but not least, is the single piece of bacon placed in the middle of the whiskers for the bunny nose!

To create the ears, stack the duck breast slices vertically above the brie wheel. Now that you have something resembling an Easter Bunny, add the carrots (stuffed peppers), grapes, crackers and whatever else your charcuterie loving heart desires!
