Chimichurri Duck & Frites

Duck Breast Chimichurri and fries

Switch up your average steak & frites dish with our All Natural Duck Breast and Duck Fat Fries! Created by Olivia Tucker from #LunchWithLiv, this dish is topped with Olivia's favorite sauce - a South American Chimichurri made with fresh cilantro, parsley and lots of garlic.

Ingredients

    Duck Fat - 1 Tbsp. if air-frying, 6 oz. if deep frying in pan. Substitute vegetable oil if you do not have duck fat.

    4 oz. vegetable oil (if pan frying)

    2-3 cups store bought frozen French fries

  • 5

    1 Bunch Parsley, roughly chopped

  • 6

    1 Bunch Cilantro, roughly choppped

  • 7

    6 Cloves Garlic, peeled

  • 8

    2 tsp. Red Pepper Flakes

  • 9

    1/2 tsp. Kosher or Sea Salt

  • 10

    4 Tbsp. Red Wine Vinegar

  • 11

    1/2 Cup Olive Oil

Directions

Duck Breast

  • 1

    Score duck breast skin in 1/4" intervals, being careful not to cut into the meat. Rotate breast and score again, making a crisscross pattern. Season with salt & pepper.

    Place duck skin side down in sauté pan, cover and cook for 10 minutes on medium low heat to render fat.

    Flip duck breast over and cook in the pan on medium heat for 7-10 minutes. Cook until the internal temperature reaches 165 degrees F.

Duck Fat Fries

    If air-frying: place 1 Tbsp. of Duck Fat in air-fryer and preheat. Then cook fries in air-fryer according to packaging directions. If the packaging does not give air-fryer directions, cook for approximately 10 minutes at 380 degrees.

    If pan-frying: melt 6 oz. duck fat in a small sauce pan along with 4 oz. vegetable oil. Bring to medium high heat, then fry fries according to packaging directions for deep frying or pan frying (approximately 3-5 minutes).

    Salt fries with 1/4 tsp. Kosher/Sea salt. Liv recommends truffle salt if you have it.

Chimichurri

  • 1

    Combine parsley, cilantro, red wine vinegar, red pepper flakes, olive oil, garlic cloves & 1/4 tsp. salt in the food processor. Blend until smooth.

    Thickly Slice Duck breast then top with Chimichurri Sauce. Serve fries on the side with extra sauce for dipping.
