South African Duck Casserole (Bobotie)
South Africa's national dish, Bobotie, takes on Duck! This delicious bake includes a sweet and savory mix of Ground Duck, onion, chutney, curry, and garlic topped with an egg and milk-soaked bread crust. 2 packs of 12 oz. Ground Duck

2 Tbsp. Olive Oil

2 Medium Onion, Finely Diced

4 cloves Garlic, Minced

1 Tbsp. Curry Powder

1 tsp Cumin

1 tsp Salt, Divided

1 Cup and ½ Cup Milk Divided

2 Eggs

3 Slices Thick Bread

2 Tbsp. Fruit Chutney

1 tsp. Apricot Jam

3 Bay leaf

Juice of 1 Lemon
Directions

Preheat oven to 350 degrees F. In a bowl, pour 1 cup milk over bread and let soak.

In a pan on medium heat, sauté onion in olive oil for 5 minutes.

Add in Ground Duck, Garlic, curry powder, cumin and ½ tsp salt. Cook until Duck is browned about 5-10 minutes. Remove from heat and place into casserole dish.

Remove bread from dish, squeezing out excess milk. Break bread into pieces and stir into meat mixture with chutney, apricot jam and lemon juice.

Combine strained and extra half cup milk then whisk with eggs and ½ tsp. salt. Pour mixture over meat and place bay leaves on top.

Bake for 45 minutes and serve.
