Maple Pecan Blondies with Duck Bacon
These decadent bars are bursting with bright maple flavor and texture from duck bacon and toasty pecans.

Preheat oven to 350°F. Lightly spray a 9” x 13” baking pan with nonstick spray.
Combine duck fat, brown sugar and maple syrup in a large saucepan. Place over medium heat and cook, stirring frequently, until duck fat has melted and brown sugar has dissolved, 2 or 3 minutes. Set aside to cool for at least 15 minutes.
While the duck fat-sugar mixture cools, cook the duck bacon in a sauté pan until crisp and golden. Drain well on paper towels, then coarsely chop.
Add beaten eggs and maple extract to the cooled duck fat-sugar mixture, stirring until well combined.
Stir in the flour, baking powder, baking soda and salt, then fold in chopped duck bacon and pecans.
Pour batter into the prepared pan, and bake in the preheated oven until golden brown and set in the center, 25-30 minutes. Cool completely in the pan before slicing into bars.
