Heat grill or sauté pan to medium heat. Season duck breast with oregano, thyme & rosemary. Reheat Sous vide Duck for 2-3 minutes on each side. If using raw duck breast, cook according to packaging directions after seasoning, or follow along for grilling instructions here.
Split green peppers in half and cut Roma tomatoes in half and deseed then. Peel and cut onion into 1” thick rings.
Brush veggies with duck fat and place on grill for 3-5 minutes per side.
Grill pita bread for 30 seconds to 1 minute on each side.
Thinly slice tomatoes, green pepper and onion into strips. Slice duck breast into ½” thick pieces
To serve: Spread 1 Tbsp. of Tzatziki sauce on pita bread, place strips of green pepper, tomatoes and onions into pita wrap. Top with duck and enjoy.
