Why duck

Maple Leaf Farms Whole DuckAt Maple Leaf Farms we love how unique duck is – in every aspect from the farm to the table.  Ducks are not like other birds and duck meat is different than other proteins, but we think different can mean better.

What does duck taste like? Our farm-raised White Pekin duck has a delicious, red meat flavor that’s more similar to steak than to chicken or turkey, and substitutes equally well for both in recipes. Plus, duck is surprisingly healthy! By properly cooking duck, you can eliminate 70% of the fat, and duck is leaner and has less saturated fats than other meats.

Although duck is popular among America's finest chefs, you don't need culinary training to prepare it. Duck is easy to prepare for everyday meals and is perfect for special occasions, and can be incorporated into a wide range of flavor profiles and cuisines by culinary adventurers everywhere.

Our family-owned company has been creating duck products since 1958, and every year we learn something new to make those products better. Caring about the details is what sets Maple Leaf Farms apart.

Here are some of the details that make a difference for Maple Leaf Farms:

Food safety
Food is part of the joy of living, and Maple Leaf Farms helps to bring families together over memorable meals with our commitment to the highest standards for quality assurance and food safety. In fact, Maple Leaf Farms was the first American duck producer to be certified by the Global Food Safety Initiative (GFSI).

Vertical integration
Maple Leaf Farms oversees each step of the process of bringing a bird to market – from the hatchery, to working with local farmers, to creating and testing every batch of feed that our ducks eat, to our plant operations.  Responsible practices result in healthy birds and a high quality end product.

Animal well-being
Maple Leaf Farms was the first duck company in North America to implement a comprehensive set of duck care guidelines and certification for our partner farmers and staff.  Through the Trident Stewardship Program, our company and the farmers we partner with focus on duck well-being, quality assurance, and natural resources conservation.
