Duck Sausage Bruschetta

1 lb. Maple Leaf Farms All Natural Ground Duck Sausage, thawed

1/2 cup Olive Oil, divided

24 slices (1/4 inch thick) French Bread Baguette

1/4 cup Puréed Garlic

3/4 cup Feta Cheese, crumbled

1 jar (12 oz.) Roasted Red Bell Peppers, drained and cut into thin strips

1 Tbsp. Finely Chopped Fresh Parsley

1. Preheat oven to 400°F .

2. Cook sausage in a skillet over medium heat until just slightly browned; stir frequently to crumble. Remove from heat and set aside.

3. Brush 1/4 cup of the olive oil over bread slices; arrange in a single layer on cookie or baking sheets.

4. Spread garlic purée over slices; top with cheese, bell pepper strips and sausage. Drizzle remaining 1/4 cup oil over bruschetta.

5. Bake 6-8 minutes, or until hot.

6. Garnish with parsley, serve and enjoy.
