Lemon Bars

Light and refreshing, these lemon bars are a versatile dessert for summer picnics or dinner parties.

1 cup All-Purpose Flour

1/2 cup Unsalted Butter, cut into pieces

1/4 cup Confectioners’ Sugar

1/2 tsp. Salt, divided

4 large Eggs

1 cup Granulated Sugar

1/3 cup Fresh Lemon Juice

2 tsp. Grated Lemon Peel

Sifted Confectioners’ Sugar

1. Heat oven to 350°F.

2. Combine flour, butter, confectioners’ sugar and 1/4 teaspoon of the salt in a food processor. Process using on/off pulses until mixture resembles coarse crumbs.

3. Pat dough evenly in an ungreased 9-inch square baking pan. Bake for 20 minutes.

4. Combine eggs, granulated sugar, lemon juice, lemon peel and remaining 1/4 teaspoon salt in food processor. Process until well combined.

5. When crust has baked 20 minutes, remove pan from oven and pour lemon mixture over hot crust. Return to oven and bake 20-22 minutes or until center is set.

6. Transfer pan to wire cooling rack; cool completely. Sprinkle sifted confectioners’ sugar over top before cutting into squares. Serve immediately or store tightly covered in refrigerator or freezer.
