Double Coconut Parfaits

The tropical flavors of mango and coconut make these parfaits the perfect finish for a Hawaiian-style meal.

1 cup Apricot Preserves

2 Ripe Mangoes, peeled, seeded, and diced

2 pints Coconut Ice Cream or Gelato

1 cup Shredded Coconut, toasted

Whipped Cream

Maraschino Cherries


Share this recipe

1. Combine preserves and mango; mix well.

2. Place a small scoop of ice cream in each of eight parfait or wine glasses, pressing down slightly to flatten. Spoon 2 tablespoons mango mixture and 1 tablespoon toasted coconut over each scoop of ice cream.

3. Repeat layering twice with ice cream, mango mixture and coconut. Serve immediately or cover and freeze until serving time. Garnish with whipped cream and cherries.
