Sweet Onion Marmalade

Excellent with smoked duck or grilled duck

3 Tbsp. Butter

2 large Sweet Onions, thinly sliced

2 Tbsp. Sugar

3 Tbsp. Raspberry Preserves

2 Tbsp. Raspberry Vinegar

2/3 cup Dry Red Wine

Salt and Pepper, to taste

Melt butter and sauté onions over medium heat for 30 minutes uncovered. Add sugar, preserves, vinegar and wine. Cook 20 minutes or until marmalade consistency is reached. Season with salt and pepper.
