2017 Discover Duck® Recipe Contest for Professional Chefs & Culinary Students

Maple Leaf Farms, Inc. (“Maple Leaf Farms”) presents the 2017 Discover Duck Recipe Contest for Professional Chefs and Culinary Students. Participation in the contest constitutes full and unconditional acceptance of these official rules. No purchase is necessary to enter or win.

About the Contest
The 2017 Discover Duck Recipe Contest invites professional chefs and culinary students from across the United States of America to enter original duck-focused recipes for a chance to win a cash prize. Five (5) winning recipes will be chosen in each of two (2) separate categories: professional chefs and culinary students. Each contestant may submit up to three (3) different recipes, however, only one (1) prize will be awarded to a contestant.

Professional chefs will compete in one (1) category for a chance to win one of five (5) prizes. The grand prize in the professional chef category is $10,000 cash. Four (4) additional professional chef prizes of $1,000 cash, each, will be awarded.

Culinary students will compete in a separate category for a grand prize of $5,000 cash. Four (4) additional culinary student prizes of $500 cash, each, will be awarded. All five (5) culinary student winners will also receive a knife set.

2017 Discover Duck Recipe Contest Theme: “Legs, Legs, Legs!”

The focus of the 2017 contest is “Legs, Legs, Legs!” which invites participants to create a dish featuring duck legs or duck leg meat as the main ingredient. Each recipe submitted must showcase a Maple Leaf Farms duck leg product.  Contestants may use bone in or boneless raw duck legs, or any of our fully cooked duck leg products, including: pulled duck leg meat, bone in duck confit, boneless skinless duck confit meat, roasted duck legs, or fully cooked duck leg & thigh meat.  

Recipe Requirements:
  1. Each recipe must be original, and created and owned exclusively by the contestant submitting the recipe. Previously published recipes will be disqualified and will not be eligible to win a prize. Each entrant must have the right to disclose the recipe, including the dish’s name, ingredients and all associated information.
  2. Recipes must feature a Maple Leaf Farms White Pekin duck leg product in the recipe.  This may be an appetizer, soup, salad or main dish.
  3. Contestants are encouraged to submit recipes that serve four.

Who Can Enter:

All entrants, regardless of the category, must be legal United States residents, residing in one of the fifty (50) states or the District of Columbia, and be eighteen (18) years of age or older as of March 1, 2017. The following requirements also apply for entrants in each category:

Professional Chef Category: An entrant must be a working chef in the culinary industry.
Working chefs include: executive chefs, sous chefs, lead line cooks, caterers, corporate chefs, culinary instructors and personal chefs. 
Culinary industry includes: restaurants, catering companies, food distributors, healthcare facilities, corporation, culinary schools, retail markets and non-commercial foodservice establishments.

Culinary Student Category: An entrant must be a student at a professional culinary school on the date of submission of the entry, with proof of enrollment required.

Who May Not enter the 2017 Discover Duck Recipe Contest:
  1. Grand prize winners in the professional chef or culinary student categories in the 2016 Discover Duck Recipe Contest
  2. Employees or contracted partners of Maple Leaf Farms, members of their immediate families (defined for these purposes as parents, children, siblings, step-parents, step-children, step-siblings, and their respective spouses), or persons living in the same household with them at any time during the pendency of the 2017 Discover Duck Recipe Contest.
This contest is void where prohibited.

How to Enter a Recipe:

To enter a recipe, visit www.mapleleaffarms.com/chef-recipe-contest to complete an entry form online or to download an entry form to submit by mail.
  1. If entering by mail, each recipe must be submitted with: (i) a signed copy of the contest rules; (ii) a completed entry form; (iii) the contestant’s personal contact information; and (iv) documentation of student enrollment (if applicable)
  2. Contestants may submit up to three (3) different recipes, however, only one (1) prize will be awarded to a contestant
  3. Contestants are strongly encouraged to submit a photo of each recipe submitted
  4. All recipes must be submitted online or postmarked by 11:59 p.m. on Sunday, June 4, 2017, to be eligible for judging. Recipes will be accepted beginning 12:01 a.m. Wednesday, March 1, 2017.

  6. Entrants assume all risk of lost, late, misdirected, incomplete or illegible entries
  7. Entries will not be acknowledged or returned
  8. By submitting a recipe, each contestant agrees to the contest rules and agrees to be bound by the decisions of the judges, which will be final.
Rights in Submissions and Limitation of Liability:

By entering a recipe in the 2017 Discover Duck Recipe contest, each entrant hereby grants to Maple Leaf Farms or its designee a non-exclusive, irrevocable, fully paid, universal license to use, copy, transmit, distribute, publicly perform, publish, edit, modify, adapt or display the recipe, or any portion thereof, in any media now known or hereafter devised without any further right of approval by or compensation to the entrant.

All entrants hereby release Maple Leaf Farms and its representatives and agents from any liability whatsoever for any claims, costs, injuries, losses or damages of any kind arising out of or in connection with participation in this 2017 Discover Duck Recipe Contest or the downloading or accessing of contest or entry materials or the acceptance, possession or use/misuse of any prize awarded to them.

Recipe Judging:

All entrants and recipes must meet the above-stated requirements to be eligible for judging. Entrants and/or recipe entries failing to meet these criteria will be disqualified, effective immediately upon Maple Leaf Farms' knowledge of such failure. All eligible recipes will be judged “blindly” to ensure objectivity, through the following process:
  1. Three (3) Master Chefs will collectively select the top twenty (20) recipes for each category based on the following criteria:
    1. Recipe Accuracy/Methodology (40%) – Recipes must have a clear, concise list of ingredients in order of use with proper sequence and proper duck preparation. For some tips on duck preparation, visit www.mapleleaffarms.com/duck-cooking-tips
    2. Creativity/Originality (60%) – Recipes will be judged for use of duck in creative and non-traditional ways
  2. Three (3) Master Chefs will collectively evaluate the top twenty (20) recipes previously selected from each category, using the criteria above, to determine the five (5) finalists in the professional chef category and the five (5) finalists in the culinary student category.
  3. The recipes of the five (5) finalists in each category will be prepared by trained chefs at Maple Leaf Farms’ facility, and the prize winners will be chosen by members of Maple Leaf Farms’ executive staff based on:
    1. Flavor/Taste (60%)
    2. Creativity/Originality (40%)
Prize Winners:

All prize winners will be announced on September 30, 2017. Prize winners will be notified by telephone. If the contestant is not available by telephone, Maple Leaf Farms will attempt to reach the contestant by email.

Professional Chef Contest:
One (1) grand prize winner will receive $10,000 cash
Four (4) professional chef finalists will receive $1,000 cash, each

Culinary Student Contest:
One (1) grand prize winner will receive $5,000 cash, and a knife set
Four (4) culinary student finalists will receive $500 cash, each, and a knife set

Limit one prize per person.

All prize winners are solely responsible for all federal, state and local taxes and fees associated with the receipt of any prize.

Obligations of Finalists/Prize Winners:

All finalists will be required to sign an affidavit of eligibility and a liability release/assignment of rights (including ownership of copyright in the recipe) and return these documents to Maple Leaf Farms within three (3) days after receiving notification of the prize. Failure to return the required documents will result in disqualification and the relevant prize will not be awarded to the disqualified finalist. Maple Leaf Farms’ inability to reach a finalist by phone, email or postal mail will also result in the disqualification of such finalist.

Each finalist hereby agrees to return any prize received if such finalist’s representations made in the affidavit of eligibility or liability release/assignment of rights prove to be untrue. Each finalist also agrees to indemnify, defend and hold harmless Maple Leaf Farms and its representatives and agents against any and all claims, damages and expenses (including court costs and attorneys’ fees) incurred as a result of any such misrepresentation.

All finalists will be required to sign a consent and release and return the consent and release to Maple Leaf Farms within three (3) days after receiving notification of the prize. The consent and release shall give Maple Leaf Farms and its representatives and agents the unlimited right to use the finalist's name, photo and personal information in any media designated by Maple Leaf Farms, in relation to the finalist’s participation in the 2017 Discover Duck Recipe Contest, for publicity, promotion, advertising and other purposes, in unedited or edited form and without further notice or additional compensation. Failure to return the consent and release will result in disqualification and the relevant prize will not be awarded to the disqualified finalist.

It is expressly understood that Maple Leaf Farms and its representatives and agents are under no obligation to the entrants or finalists other than as expressly set forth in these Official Rules. All prize winners are solely responsible for all federal, state and local taxes and fees associated with the receipt of any prize.

I certify that this is an original recipe, created and owned exclusively by me. I understand that by submitting my recipe, I am granting to Maple Leaf Farms or its designee a non-exclusive, irrevocable, fully paid, universal license to use, copy, transmit, distribute, publicly perform, publish, edit, modify, adapt or display the recipe and any accompanying photograph(s), or any portion thereof, in any media now known or hereafter devised without any further right of approval by or compensation to me. I hereby give Maple Leaf Farms, Inc. permission to use my name, my image, my recipe and my photograph(s) for publicity purposes. I represent to Maple Leaf Farms, Inc. that by submitting this recipe, I am releasing Maple Leaf Farms, Inc., the judges and judging committee, any sponsoring organizations and their respective employees, from any claim or liability of any nature whatsoever arising out of the selection, judging and awards process. I also understand that I am responsible for all taxes which may result from my prize winnings and that I will be required to provide Maple Leaf Farms, Inc. with my social security number for purposes of tax reporting before I may claim my prize.
